Buy ZWILLING Four Star Filleting knife

That icy flex in the blade lets me work clean cuts along the backbone without snapping, and the handle lock is so solid my hand never slips even when it’s wet.

The 7-inch blade is stiff enough for precise cuts but still flexes just right along the backbone. Cleaned up in seconds after trimming a whole salmon, and the handles don't get slippery even when wet.

Took it out for some trout this weekend, and the 7-inch blade slid through the ribcage like butter. The handle has a nice, secure grip even with wet hands, which I wasn't expecting. It's already become my go-to for any delicate fish work.
