The 5.5-inch blade is exactly what I need for quick garlic and shallot work, and it keeps that sharp edge through a whole week of meal prep. Arrived fast too, which was a nice bonus.

Finally a smaller prep blade that still feels like a proper chef's knife—the 5.5 inch size is perfect for quick mincing without the big blade getting in the way. The edge came razor sharp right out of the box and has held up through a week of daily use.

My wife kept stealing my old knife, so I grabbed this 5.5-inch prep size for myself. The fine edge holds up noticeably better than my previous set, and the compact blade makes quick work of shallots without feeling clumsy. It's already become my go-to for most weeknight dinners.
